This week I have a blood test to make sure that the gestational diabetes I had through my pregnancy with Elizabeth has completely gone. Thankfully, this isn’t a fasting one – I struggle SO much without coffee first thing in the morning! Apart from that, and a weight check for Elizabeth, this week is a fairly quiet one. I’m making the most of these because in the next couple of weeks, all of the Christmas things get going and it gets SO busy. Both Graham and I have been busy batch cooking when we get a chance and freezing them to carry us through the next few weeks. Toad in the hole, yum. Full of childhood memories. I like to batch cook a curry and also the rice separately. It’s great on a cold wet morning, like today, to take a tub of curry and a tub of rice out of the freezer to defrost. Have a good week.
