We are a family that never seems to stop. We have three young children who need ferrying about to clubs and playdates. Graham works full time in a cheese factory and I work full time from home, balancing blogging and a freelance writing job. Neither of us wants to, or particularly have the time to stand cooking for hours every night, so quick and easy meals are what we tend to go for.
One of our favourite meals is stirfry. It’s cheap, it’s an easy way to get plenty of
Beef is one of my favourite meats. It’s naturally rich in protein and source of iron which helps reduce tiredness and fatigue. That’s particularly important to me at the moment, while I’m pregnant with baby girl.
Beef and Broccoli Stirfry
Ingredients:
4 beef steaks, cut into thin strips
Three teaspoons of oyster sauce
Teaspoon of soy sauce
Teaspoon of sesame oil
Half teaspoon of sugar
Squeeze of garlic puree
Thin slice of fresh ginger
Mushrooms
Broccoli
Seasame seeds
Egg noodles
Method
In a bowl, mix together the sesame oil, oyster sauce, sugar and soy sauce. Coat the strips of beef steak in the mixture. Leave to marinate (the longer the better, but if you’re short on time, a few minutes is fine).
Add the garlic puree and the ginger to a hot pan with oil and fry off for a minute. Add the beef strips and cook until no longer pink. Add the mushrooms and the broccoli until cooked.
Serve with egg noodles and sprinkle with sesame seeds.
