We are extremely lucky that in our house, there are no allergies or intolerances. It means that we generally all eat the same meal every night as a family. As you can see from my Meal Planning Monday posts, we try to have a range of different foods, and the kids are used to trying different things. Alex is our fussy one, but even he is getting better at trying new things and is eating more than the plain pasta, rice and potatoes he was eating a few months ago!
Fajitas have always been a favourite of ours, featuring regularly on meal plans. They’re quick and easy to do at the end of a long day, don’t use any expensive or hard to find ingredients and it’s easy to personalise for each person. I’d never considered that someone suffering from medical issues such as coeliac disease couldn’t have something as delicious as fajitas. Thankfully, Old El Paso, who make the best range of Mexican food, have released a gluten-free fajita kit so everyone can enjoy them.
These Old El Paso Gluten Free mild smoky BBQ fajita kits serve 3-4 people and contain:
8 Gluten-Free Tortillas
1 Gluten-Free Salsa
1 Gluten Free Mild Smoky BBQ seasoning
To make the fajitas, we simply cooked strips of chicken breast with the smoky bbq seasoning and warmed the tortillas in the microwave for a few seconds. That was it. Literally. Oh, and chopped a bit of salad up and chucked the salsa in a bowl. It was done in less than 15 minutes.
You could jazz it up by cooking things like onions, courgettes, peppers etc in with the chicken and seasoning, but we like to keep things relatively simple. We put it out on the table for everyone to help themselves.
We did find the tortilla wraps were smaller than the ones that we normally have, which made them a little bit more fiddly to wrap, but they were a perfect size for the kids.
Graham and I loaded ours with salad, chicken and the salsa, whilst the kids opted not to have the salsa and coat it in tomato ketchup, as they seem to do with most meals!
It is supposed to be mild but they were quite spicy. Alex and Benjamin ended up having plain chicken in theirs because it was a bit much for them. Harrison managed his and enjoyed them, but did need to have a drink in between mouthfuls. Graham and I thought they were absolutely delicious – the smoky bbq gave it a taste that was a bit different to our normal fajitas. I wouldn’t have guessed they were gluten-free at all if I didn’t know beforehand – if I’m honest, once everything was loaded on the tortilla wraps, they tasted exactly the same and had the same texture as ordinary ones.
They were massive hits though – definitely something that will be going on the meal plan and shopping list on a regular basis now, for a quick, easy and healthy family meal.

We do fajita Mondays! We put all the bits in the middle of the table and you build your own. We also do an alternative meal where we make a nice chilli and we bake potato wedges, then you fill a baking dish with the chilli and prop the wedges up around the edge, sprinkle cheese over and bake. Put the dish in the middle of the table and everyone digs in. yummy.
