I spent this weekend at Center Parcs in Eleveden for my very soon to be sister-in-law’s hen do. It was absolutely amazing – lots of good food, lots (and lots!) of prosecco and cocktails, a girly movie and a lush day lounging about in the spa with five fabulous ladies. But….it’s back to the real world now (although I’m drinking gin from a pineapple glass on a Monday evening!) and back to meal planning for the week ahead. The boys have broken up for Easter so, hopefully, the weather will allow us to get out and about a bit, and then, weather permitting, my parents are coming up for a few days on the weekend and my brother, sister in law and nephew might pop up on Sunday. We’ve already had Monday night’s tea, but here is this week’s plan!

Cottage pie with swede and sweet potato mash
Chicken casserole with mash and veg
Baked potato in crispy skins with pancetta, cheese and salad
Tagliatelle Carbonara with garlic bread
Homemade burgers and chips
