Meal Planning Monday

Ahh, Monday. Everyone’s favourite day of the week! Actually, I don’t mind it so much this week because it’s one of Graham’s days off, which I always look forward to.

Last week we did well, apart from Tuesday night. I thought I had some casserole beef in the outside freezer for the chilli but I had forgotten to cross it off the list when I used it up. As it was, I had a free Hello Fresh box delivered on Tuesday from a code that someone gave us, so we ended up having one of the meals from that – this gorgeous steak with lemon and vegetable couscous. It was really nice, but I think it’s incredibly expensive, costing approximately £6.50 for two of us. I reckon we could make that at home a lot cheaper – I may have a go at recreating some of the dishes on a budget and blogging our results.

We have still got two of the three meals left from the box because Graham was at work, so they will be featuring on this weeks plan. I also stupidly forgot to cancel the next box, which at £39 for three meals for two of us is not cheap! Luckily, they gave me a £10 partial refund, and we still have the box coming, so that’s a few meals for us sorted.

Meal Planning Monday

Monday: Mexican Superfood Cottage Pie for adults, chicken nuggets, chips and beans for the kids

Tuesday: Chicken shawarma with dukkah courgettes and chickpeas for adults.  Homemade soup and veg for kids.

Wednesday: Prawn and Chorizo Chickpea Stew, Sausage, mash and veg for kids

Thursday: Pizza, wedges and garlic bread

Friday: Chicken stew, mashed potato and vegetables

Saturday: Spaghetti bolognese and garlic bread (if my parents visit this weekend we will probably swap this for a takeaway!)

Sunday: Honey and mustard pork, mashed potato and veg

  1. Eek! £6.50 does sound expensive for one meal….I think it would be easy to make it for less.
    I do like the sound of the Prawn and Chorizo Chickpea Stew…Yum.
