We absolutely love Mexican food – tacos, fajitas, burritos, enchiladas and of course nachos are among our favourite meals. Whenever I think of making a Mexican inspired meal at home, I always think of Old El Paso, so I was rather pleased when they sent us this package of rather delicious looking Mexican treats to create a quick and easy family meal.

What I really love about Old El Paso meal kits is how easy they are. I’m not a natural cook at all, and on the rare occasion I do cook, I want it to be super quick. With the Old El Paso kits, I can have a meal ready in about twenty minutes, which is ideal whilst trying to deal with the three kids.
We had never tried the stand and stuff kit before, and the kids were really excited because they looked like boats. When things look more interesting, they are more likely to eat them, and because the kit was mild flavoured, it meant even Benjamin could get in on the Mexican action.
Graham prepared the potato wedges (I can’t ever seem to cut the potatoes in the right shape) and sprinkled the spice mix on, before popping them in the oven for around 40 minutes. To make the filling for the tacos, we cooked some beef mince in the wok, along with some chopped onions and peppers. That was literally it.
We let the kids fill the soft tacos themselves, and choose their toppings. We all put a bit of grated cheese and sour cream on them, and Graham and me added the jalapeños and guacamole and tucked in. They were absolutely delicious. The kids demolished them – even Benjamin.
The potato wedges were a little spicy for them, so next time we do this we will make some plain wedges for them, but it was a hit all round!
